Why it’s good for mums
This is a 'no cook’ recipe for when you are short on time. You just need to pick up a bbq chicken and some salsa.

Why it’s good for kids
This is an ‘add –in’ dinner whereby kids take matters into their own hands by making their own meal.

Ingredients   Method

1 bbq chicken, shredded
½ x 375g tin corn kernels, drained
300g salsa
1½ cups cheese, grated
4 lettuce leaves, shredded
3 sticks celery, finely sliced
2 avocados, mashed
150g sour cream
8 tortillas

 
  1. Prepare ingredients and place into separate bowls
  2. Warm tortillas in microwave for 30 secs. To warm layer between paper towels so tortillas don’t dry out.
2. TIPS FOR MUM

Busy Mums
Make sure you have the salsa before you decide to cook this recipe as not all delis/supermarkets carry salsa. Buy the bbq chicken a day earlier and shred. Prechop the celery and grate the cheese.

Tips
Mexican salsa is available in good in delis and supermarket deli counter. Alternatively you’ll find the salsa is next to the corn chips in the supermarket. These salsa’s tend to have more preservatives/additives as they are shelf stable.

Tortillas are available from most supermarkets come in mini, normal + jumbo. I served my kids mini but of course they want the big ones which mum and dad were eating. My 5 year old coped with a normal size but it was easier to my 2 year old to eat the mini ones. I helped her roll it up and eat it.

Hiding vegetables
It’s difficult to hide vegetables in ‘add-ins’ meals. An option is to mix the salsa, chicken, corn and celery together. Roll up in tortillas and place in well greased baking dish, top with grated cheese and heat at 200c for 12 minutes. Serve with sour cream and mashed avocado. Since you are hiding vegetables you may like to go one step further and add mashed red kidney beans (great for fibre and will blend into the salsa) to the salsa and chicken mixture.

3. MAKING IT FUN

Creating a Scene
The scene is set with each ingredient in individual bowls. As we have mentioned children are very visual so they will like seeing the food presented in bowls. If you have younger children you may like to add toothpick flags to each bowl for extra fun and presentation.

Game Time
Mexican wave. This is our variation of the Mexican Wave. Everyone has to take a bite of dinner and when they have finished chewing you have to put both their hands in the air. Wait until everyone has hands in the air and then start again.

Hands on

  • Drain corn kernels
  • Wash lettuce and celery
  • Mash avocado
  • Place ingredients into separate bowls
4. ADULT FRIENDLY    
2nd sitting
  1. Leave aside tortillas until you need them
  2. Set aside appropriate portion of all ingredients
 
Spice it up
Add 1 fresh chopped chilli and fresh coriander leaves to adult portion of salsa
