How to store & serve our Christmas Menu

(Available 11 November - 24 December 21)

The following guide has been put together as a one-stop reference for all items on our Christmas Menu.

Its purpose is to make storing, preparing and serving our Christmas food 100% foolproof, so you can get on with the business of enjoying yourself!

This guide will tell you:

  • what the item is
  • how the product arrives to you (frozen/fresh, cooked/uncooked)
  • how to store it
  • how to serve it (hot/cold)
  • what to serve it with
  • how long it will last

Check through the categories for the specific items you’ve ordered. This will not only save you time and stress on Christmas day, but will also ensure you get the very best, most delicious result!

Note: Every item does carry a label with instructions on it.

 

ENTREES

Vodka cured gravlax (GF)

  • Serves 4
  • House-made and hand-sliced salmon.
  • Serve with GDS Citrus Aioli (not included) rye bread and sliced cucumber.
  • Product is delivered frozen. 3 months use by date. Once defrosted use within 5 days.
  • Defrost in fridge overnight. Remove packaging & transfer to individual plates.

 

Australian Tiger Prawns (GF)

  • Serves 4-6
  • 1kg of fresh prawns
  • Serve chilled with Citrus Aioli or pack of 3 Dipping sauces (not included).
  • Product is delivered frozen. 3 months use by date. Once defrosted use within 3 days.
  • Defrost in fridge overnight.
  • Tip: Roll prawns (peeled or unpeeled) in paper towel to remove excess moisture

 

Trio of dips (GF)

  • Serves 4-6
  • Hummus, roast capsicum, beetroot with cumin + flat bread.
  • Product is delivered frozen. 3 months use by date.
  • Defrost in fridge overnight. Dry fry or oven warm the flat bread to serve.

 

Tomato + goats cheese tarts

  • Serves 4
  • Product is delivered frozen. Heat for 10 minutes in preheated 180c oven.

 

Vegetarian Antipasto Platter

  • Serves 4-6
  • Trio of dips, flat bread, falafel w green harissa, olives, sun dried tomato, roast capsicum, manchego cheese and quince paste.
  • Product is delivered fresh. Use within 8 days.
  • Store in fridge until ready to serve. Dry fry or oven warm the flat bread to serve.

 

Premium Antipasto Platter

  • Serves 4-6
  • Premium selection of charcuterie: hummus, olives, sun dried tomato, roast capsicum, manchego cheese and quince paste.
  • Product is delivered fresh and ready to serve.
  • Use within 8 days.
  • Store in fridge.

 

TURKEY

1kg Raw Turkey breast (GF)

  • Serves 4-5 (carves into approx. 10 -12 slices)
  • Fresh, raw, free range boneless turkey breast with Orange + pistachio nut stuffing.
  • Product is delivered fresh in a vacuum sealed Cryovac bag.
  • Use within 10 days.
  • Store in fridge.
  • How to cook: Allow turkey to come to room temperature for 1 hour prior to cooking, then remove packaging, leaving the netting in place. Transfer to a baking dish, pour over 1/2 cup each of good quality chicken stock and white wine. Place in pre-heated fan forced 180c oven. Bake for 50 minutes, rest for 10 minutes. Cooking time may vary depending on oven. Remove netting before carving and serving.

 

2kg Raw Turkey breast (GF)

  • Serves 8-10 (carves into approx. 20 – 24 slices)
  • Fresh, free-range boneless turkey breast with Orange + pistachio nut stuffing.
  • Product is delivered fresh in a vacuum-sealed Cryovac bag.
  • Use within 10 days.
  • Store in fridge.
  • How to cook: Allow turkey to come to room temperature for 1.5 hours prior to cooking then remove packaging, leaving the netting in place. Transfer to a baking dish, pour over 1 cup each of good quality chicken stock and white wine. Place in preheated fan forced 180c oven. Bake for 90 mins, rest for 10 minutes. Cooking time may vary depending on oven. Remove netting before carving and serving.

 

2kg Cooked turkey breast (to re-heat)

  • Serves 8-10
  • Cooked fresh, free range boneless turkey breast with Orange + pistachio nut stuffing.
  • Product is delivered fresh in a vacuum sealed Cryovac bag. Use within 5 days. Store in fridge.
  • How to serve: remove bag and netting, slice. To warm in oven, place sliced turkey on a tray lined with baking paper. Cover with foil and place in a pre-heated 160c oven for 20 mins. Check to see if hot enough and reheat longer if required.

HAM

Ham and turkey platter

  • Serves 4-6
  • Sliced premium leg ham and marinaded turkey breast served with 3 condiments (Dijon mustard, cranberry chutney + citrus aioli).
  • Product is delivered fresh and ready to serve. Use within 8 days. Store in fridge

 

½ kg sliced ham

  • Serves 4
  • Hand sliced double smoked leg ham.
  • Product is delivered fresh and ready to serve. Use within 8 days. Store in fridge.

 

5kg double smoked leg ham

  • Australian premium double smoked leg ham.
  • Product is delivered fresh in a vacuum sealed Cryovac bag. Use within 3 weeks.
  • Remove packaging. To take the skin off the ham, cut around the edge between the skin and the fat. Carve and slice as required.
  • To store, place in a damp ham bag or tea towel in the fridge.

 

5kg glazed ham (ready to bake)

  • Ham marinaded in Fig jam + apple glaze.
  • Product is delivered fresh in a vacuum sealed Cryovac bag. Cook within 10 days.
  • Remove packaging. Place ham in large baking dish and bake in pre-heated 180c oven for 1 hour. Baste every 15 minutes.
  • To store, place in a damp ham bag or tea towel in the fridge for up to 3 weeks.

5kg glazed ham

  • Ham marinaded in Fig jam + apple glaze.
  • Product is delivered fresh, already baked and ready to carve and serve or re-heat. Use within 3 weeks.
  • To store, place in a damp ham bag or tea towel in the fridge.

 

SEAFOOD

Australian Tiger Prawns (GF)

  • Serves 4-6
  • 1kg of fresh prawns
  • Serve chilled with Citrus Aioli or pack of 3 Dipping sauces (not included).
  • Product is delivered frozen. 3 months use by date. Once defrosted use within 3 days.
  • Defrost in fridge overnight. Use paper towel to remove any excess moisture.

 

  • Salmon fillet w salsa verde (GF)
  • Serves 4-6
  • 600gm (half side) salmon fillet.
  • Product is delivered frozen.
  • Defrost overnight in fridge. Bring fish to room temperature 30 minutes before cooking. Place on greased oven tray or use baking paper. Bake in pre-heated 200c oven for 15 minutes. Check fish at this stage. Cook longer if required but please remember the fish will keep cooking when removed from oven. Allow to rest for 5-10 minutes before serving.

 

CHICKEN & DUCK

1kg Chicken ballotine

  • Serves 4-6
  • Whole raw chicken, de-boned, rolled and stuffed with bacon, sun dried tomato, basil and shallot.
  • Product is delivered frozen. 4 months use by date.
  • To bake, leave netting in place. Place in preheated 180c oven for approx. 50 mins. Allow to rest 10 mins before carving/serving. Cooking times may vary depending on oven.

 

Duck w Pear + Orange Compote (GF)

  • Serves 2
  • Slow cooked duck maryland in traditional French fashion, served with Pear + Orange Compote.
  • Product is delivered frozen in a vacuum sealed Cryovac bag. 4 months use by date
  • Defrost overnight, remove packaging, place duck on oven tray and reheat in preheated 200c oven for 12-14 minutes. Allow Pear + Orange Compote to defrost and serve with duck confit.

 

Tandoori chicken skewers

  • Serves 2
  • 6 chicken tenderloins on skewers with house made tandoori marinade.
  • Product is delivered frozen. 4 months use by date
  • Defrost overnight in fridge. Not suitable to defrost or cook in microwave. BBQ over medium coals, grill or pan fry for approx. 2-3 minutes each side. Allow to rest before serving.

 

LAMB

Riverina lamb rump (GF)

  • Serves 2
  • Premium grain fed Riverina rump covered in fresh herbs, garlic + olive oil.
  • Product is delivered frozen. 4 months use by date
  • Defrost overnight in fridge. Bring meat to room temperature 30 minutes before cooking. Roast in 200c oven for 15-20 minutes or BBQ over medium coals for approx. 7 minutes each side.

 

Lamb Souvlaki fillets (GF)

  • Serves 2
  • Premium baby lamb fillets in lemon, sumac, garlic + olive oil marinade.
  • Product is delivered frozen. 4 months use by date
  • Defrost in fridge overnight. Bring the meat to room temperature 30 minutes before cooking. BBQ over medium coals for 2 minutes each side. Alternatively, heat a little oil in a fry pan and fry lamb fillets for 3-4 minutes. Rest in pan before serving. Pour pan juices over to serve.

 

SALADS

  • Christmas Crunch salad (GF)
  • Serves 4-6
  • Product is delivered fresh. Use within 8 days.
  • When ready to serve, toss all ingredients together with dressing.

 

  • Italian slaw with parmesan cheese (GF)
  • Serves 4-6
  • Product is delivered fresh. Use within 8 days.
  • When ready to serve, toss all ingredients together with dressing.

 

  • Warm Moroccan couscous salad w Chickpeas
  • Serves 4-6
  • Product is delivered frozen and fresh. Use within 8 days.
  • When ready to serve, warm couscous and toss all ingredients together with dressing.

 

SIDES

Duo of dipping sauces

  • Chipotle mayonnaise and Soy + Wasabi
  • Product is delivered fresh. Use within 8 days.

 

Chipotle Mayonnaise (GF)

  • Serves 4
  • Serve with Vodka Cured Gravlax or any other fish, chicken or beef.
  • Product is delivered fresh. Use within 8 days.

 

Cranberry chutney (GF)

  • Serves 8
  • Serve chilled with any cold meats, turkey, chicken etc.
  • Product is delivered fresh. 2 months use by date.

 

Christmas gravy (GF)

  • Serves 6-8
  • Product is delivered frozen. 3 months use-by date.
  • How to prepare: Defrost in microwave for approx. 15 minutes. Heat on high for a further 3-4 minutes. Remove lid and whisk until smooth. Take care, hot liquid. Alternatively, add to pan juices (if roasting meats) and stir to combine.

 

Slow roasted kipfler potatoes

  • Serves 8
  • Product is delivered fresh. Use within 8 days.
  • Transfer to oven tray and heat at 200c for 12 minutes.

 

Glazed carrots with sesame seeds

 

Broccoli with garlic

  • Serves 2
  • Product is delivered fresh. Use within 6-8 days. Microwave on high for 2-3 minutes.

 

Artisan sourdough bread

  • Serves 8
  • Product is delivered frozen. Store frozen and defrost on bench 1 hour before.
  • Bake at 180c for 10 minutes.

 

 

DESSERTS

 

Christmas pudding

  • Serves 8
  • Product is delivered fresh. Use within 3 months
  • To heat, place in microwave on medium heat for 4 minutes.

 

Brandy sauce

  • Serves 8
  • Product is delivered fresh. Use within 6 months.
  • Heat in saucepan until warm.

 

Mince pies

  • Serves 6
  • Product is delivered fresh. Use within 4 weeks.
  • Warm in pre heated oven 180c for 5 minutes.

 

Chocolate fondant

  • Serves 2
  • Product is delivered frozen.
  • Bake in pre heated 180c oven for 15 minutes from frozen.

 

Lemon tart (GF)

  • Serves 4
  • Product is delivered frozen.
  • Take out of freezer 15 minutes prior to serving.

 

Pecan tart (GF)

  • Serves 4
  • Product is delivered frozen.
  • Take out of freezer 15 minutes prior to serving.

 

Salted caramel tarts (GF)

  • Serves 4
  • Product is delivered frozen.
