A classic in the Valencian region of Spain, our version of the paella consists of free-range chicken thighs mixed through a bed of bomba rice, onion and capsicum. Once baked, you get a lovely generous serve of tender chicken with rice with flavours emanating from the mint, paprika, oregano and cumin. Level up this hearty meal with a squeeze of lemon and drizzle of olive oil. A generous adult serve for 4.

PreparationFrozen: Remove lid, add 2 cups boiling water, cover with foil. Bake in pre-heated 160c oven for 40 minutes. Remove foil, bake at 180c for further 20 minutes. Defrosted: As above except bake at160c oven for 30 minutes. Remove foil, turn oven temp up to 180c for 20 minutes. If desired add in peeled raw prawns, green peas, calamari rings in the in the final 10 minutes of cooking.
