Eggplant parmigiana w vege couscous
In this new version, we have exchanged the couscous for cauliflower rice to not only make this dish gluten free but lower in calories and higher in fibre. This classic Italian vegetarian dish is composed by layering roasted eggplant with a house made garlic, basil and tomato sauce and the addition of capsicum and zucchini. Staying true to the original recipe we add a small amount of mozzarella too and serve it all on a bed of cauliflower rice.
