Nonna's chicken cutlet with roast eggplant is big on flavour and moreish-ness but the chicken portion is modest (our supplier sent smaller cutlets) . The meal tastes great and have some bread on hand to mop up the leftover parmigiana sauce. The chicken is marinated in tomato, red wine, capers, onion, garlic, GF stock, basil, salt, pepper. 

Once baked to perfection, you get tender juicy chicken cutlets which absorb the natural sweetness of the tomato and the richness of the red wine. Capers, onion, garlic, and basil elevate the taste, making this meal a scrumptious dish - reminiscent of Nonna's love.

Free range chicken cutlet (raw), tomato, eggplant, onion, parmesan cheese, garlic, GF stock, basil, oregano, thyme, salt, pepper CONTAINS: DAIRY


Cook from frozen. Remove lid and place in oven 160c on middle shelf for 40 mins. Then increase temp to 180c for another 10-15 mins. If defrosted: Bake in 180c oven for 20-25 minutes. Not suitable to cook in microwave.
