Persian chicken w couscous
We start with extra lean chicken breast and then roast it in a spicy, sweet sauce of tomato, capsicum, chickpeas, lemon, onion and herbs. The special Persian flavours are derived from the addition of marmalade, mint, ginger, cumin and paprika. Served on a bed of couscous, this meal is big on protein to keep you full right through until dinnertime.
