Chicken breast is one of the leanest sources of protein around and this salad comes with a generous serve to ensure you won't be hungry again anytime soon. Teamed with quinoa, roasted peanuts, fresh veges and herbs, it's served with a spicy nam jim dressing for a zesty finish.
