Salmon + mushroom filo
The origin of this meal is salmon coulibiac a classic Russian fish pastry loaf. We've substituted the not-so-healthy puff pastry for light filo and pulled back on the fat to produce a calorie friendly, yet tasty lunch. We use fresh poached Tasmanian Huon salmon, flaked and mixed with steamed rice, sautéed mushrooms, spinach and dill then wrap in filo and oven bake.
