This is a variation of the classic pork dish, using chicken mince. We flash fry the lean chicken with bamboo shoots, carrots and water chestnuts for crunch. It brings forth all the best Chinese sweet-soy flavours incorporating garlic, ginger, soy, shallots, chilli, coriander and peanut oil. Served on a bed of brown rice.
