Keep the frozen prawns in the freezer, moving to the fridge to defrost the day before you are going to serve. Use kitchen paper to remove any excess moisture. Use by: Frozen 3 months, Fresh 3 days.

Note: all commercial fishermen snap freeze prawns at sea once they are caught. The 'fresh' prawns you buy in at the fish markets and shops have simply been defrosted.

These are whole cooked Australian prawns which require shelling. Tip: before serving whether still in shell or peeled, roll in paper towel to remove any moisture and this will intensify the flavour of the prawns. Serve with Citrus Aioli or a squeeze of lemon. Once defrosted consume within 3 days.
